Jamaican Jerk Chicken
Includes jerk seasoning & rice spice to create a classic Jamaican feast at home.
- 15g Jamaican Jerk Seasoning
- 4g Rice Seasoning
- 4 Chicken Thighs/Drumsticks
- 1 Lime
- 400g Tin Kidney Beans
- 400ml Tin Coconut Milk
- 10 Spring Onions
- 150g Long Grain Rice
Marinate: Mix jerk seasoning with lime zest & juice. Coat chicken and set aside while you prep the rest of the ingredients.
Sear: Cook chicken in a hot pan with a little oil, 3-4 mins per side to crisp and sear the outside. Transfer to a baking tray & finish in the oven. 200c for 15 mins.
Start Rice: In the same pan, fry spring onions with rice seasoning & a pinch of salt for 2 mins. Add rice and stir.
Simmer: Add coconut milk, 100ml water & kidney beans. Bring to a boil, cover & simmer 10 mins. Take of the lid and stir until liquid has been reduced.
Serve: Spoon on the rice and serve with the jerk chicken on top. Enjoy!
